"St. George and the Dragon"
The legend of St. George and the Dragon was a favorite in the middle ages. The actual George was not a knight, but a Roman soldier, martyred in the early days of the Church.  George is the patron saint of England, Portugal, Greece, Russia, and many other places.

Sue's soft, colorful rendition, looking through an ornate, medieval window, is based on a 15th century icon you can see on Wikipedia.
